GROUND NUT (PEANUT) SOUP WITH CHICKEN
(Serves 8-10)
Ingredients
3 lbs fresh chicken pieces (preferably hen)
1/2 teaspoon season salt
1 cup groundnut paste /peanut butter
1/2 teaspoon curry powder (optional)
2 small onions
1/2 teaspoon Cayenne pepper or 1 fresh whole scotch bonnet pepper (optional)
4 med. fresh ripe tomatoes
2 inches Fresh ginger finely chopped/ground
2-3 cloves garlic finely chopped
3 tbs tomato paste
3 chicken bullion cubes
Salt to taste
7 pints / 14 cups of water
Place chicken in a large pot. Blend ginger and garlic, pour over chicken, add season
salt, salt, curry powder and 1 chopped small onion. Place on medium heat and sauté
for 7-10 minutes stirring occasionally. Add tomato paste and 1 pint of water and cook
for 5 minutes. Add whole tomatoes and whole onion to pot and continue cooking. In a
separate bowl, or blender, mix peanut butter with 1 1/2 pints hot water, mix
thoroughly until texture is smooth and pour over chicken. Add 3 pints hot water and
cook over medium heat for 15 minutes. Remove whole tomatoes and whole onion
from pot and puree in blender with 1/2 pint of water, pour puree back into pot, add
remaining water, stir and bring pot to a boil about 10 minutes. Reduce heat to medium
low and cook for 15 to 20 minutes. Serve with fufu, emotuo (rice balls), plain rice,
yam, potatoes, plantains, or any side of your choice.
Note: With the same ingredients, and cooking method, the chicken can be substituted
for other meats like beef, or turkey. Pepper can be increased or reduced according to
taste. The consistency of the soup can be served thicker by allowing to simmer longer
or lighter by adding more water.
