Jollof Rice with turkey

JOLLOF RICE WITH SMOKED TURKEY
(rice cooked in tomato sauce – serves 8 to 10)

Ingredients
6 level cups White Jasmine Rice
2 lbs smoked turkey drumsticks
2 heaping tsp. Curry Powder
1 (29-oz.) can Tomato Sauce
4 level tsp. Knorr chicken flavor bouillon powder
1/2 level cup Vegetable Oil
3 med. Onions (finely chopped)
2 medium Habanero peppers
5 cups Boiling water
3 heaping tsp. Creamed Coconut
1 1-lb. bag Frozen Mixed Vegetables

Chop onions and habanero peppers and set aside. Skin and debone the smoked turkey
drumsticks. In a nonstick wok, heat the vegetable oil and sauté the onions with the
chopped peppers. Add the creamed coconut and tomato sauce. Let it simmer for about
15 minutes or until oil separation is achieved. Add the chopped turkey, curry powder
and chicken bouillon. Let cook for another 15-20 minutes on low heat. Stir in the 6
cups of rice. Preheat oven to 450 degrees. Pour rice and sauce into a disposable foil
turkey roaster. Add 5 cups of boiling water. Cover with foil and place in the oven for
1 hour, stirring every 20 minutes. Add mixed vegetables after 40 minutes and let cook
with the rice for the last 20 minutes until done. Taste and check texture to make sure
rice is evenly cooked. Serve with your favorite salad. Bon appetite!

Note: A very popular West African dish, Jollof rice is served at almost every
Ghanaian function. Variations can be achieved by substituting the smoked turkey for
corned beef, fried chicken pieces or goat meat. Suitable for vegetarians as well if
meats are completely eliminated.
